Portugal is long famous for its egg custards. It is believed that they were introduced to Portugal by the Moors, however, it was the nuns at the Mosteiro dos Jerónimos in Belém who made them into the tradition that they are today. In the 18th century, convents and monasteries used large quantities of egg-whites for starching of clothes, so it was quite common for the nuns to use leftover egg yolks to make cakes and pastries.
